Cream of Pumkin Soup
A family favorite that brings the taste of restaurant pumpkin soup to home - and even better!
In a large pot, saute onions in olive oil and mix together pumpkin, chicken stock, bay leaf, thyme , nutmeg and salt and pepper. Bring to a boil over high heat. Cover, reduce to medium heat, and simmer until pmpkin is tender. 15 to 20 minutes.
Puree soup with a hand blender or in a food processor in batches. Whisk in milk or cream until desired consistency is achieved. Return to pot and heat to serving temperature. Do not boil.
Garnish option: Top with 1 teaspoon sour cream, cream or yogurt and cut through with a skewer or knife with a swirled effect.
