Tinolang manok is a filipino comfort food made with chicken pieces cooked in ginger-flavored broth.
Ingredients

1 whole chicken, cut to pieces

3 cloves of garlic, minced

1 medium onion, sliced thinly

2 thumb-sized ginger, julienned
- 3 tbsp fish sauce
- 5 cups water

1 small sayote, cut into bite-sized pieces

1 medium carrot, cut into bite-sized pieces

1 bunch of chili leaves (dahon ng sili)
- salt and pepper to taste
Directions
Heat oil in a pot. Add garlic, onions, and ginger and cook until softened.
Add chicken and cook until chicken starts to change color, about 7-10 minutes.
Add fish sauce and stir for about a minute.
Add water and bring to a boil. Remove the scum that floats on top. Then lower the heat, cover and simmer for about 30 minutes.
Add sayote and carrot and cook for another 10 minutes or until vegetables are tender.
Season with salt and pepper to taste.
Add chili leaves (Dahon ng Sili) and cook until just wilted.
