The slow cooking method brings out the best of the tender and delicate texture of the black chicken.
Ingredients

2pc Black Chicken 400-500g, cut into serving pieces
- 1/4 cup Olive oil

1 inch Ginger, sliced thinly

1 clove Garlic, minced

1/2 cup Shallots. sliced
- 1 tbsp Soy Sauce
- 2 tbsp Oyster Sauce
- 1/4 cup Rice Wine
- 1 tsp Sugar
- 1 cup Chicken Stock
Directions
- Pan fry the black chicken until all sides are brown. Set Aside
- Saute the ginger, garlic and shallots until fragrant and onion is translucent
- Put back the black chicken and add the soy sauce, oyster sauce, rice wine and sugar. Mix and Cover to simmer for 25 minutes.
- Uncover and Simmer for another 10 minutes until the sauce thickens
- Serve with Hot Rice
