Sous Vide Ginger-Scallion Chicken (includes steaming option)

300g Chicken Breast FIllet (Skinless)
6 tbsp scallions/ spring onions (green part only) , chopped
2 tbsp ginger, grated
1/2 cup cooking oil
2 tsp sesame oil
salt and pepper to taste
Set sous-vide to 146.5F.
Season chicken breast with salt and white pepper.
Place chicken in a vacuum sealed bag, and sous-vide at 146.5F for 2 hours
Prepare GINGER SCALLION SAUCE:
a. Combine chopped scallions and grated ginger in a heat-proof bowl.
b. In a small saucepan, heat oil until it ripples an shimmers.
c. Carefully pour hot oil over ginger-scallion mixture.
d. Season with salt and white pepper, drizzle with sesame oil and mix thoroughly
Slice cooked chicken at an angle, arrange on serving plate, and spoon prepared sauce on top.
Serve with hot rice
Note 1: The chicken can be steamed on high for 20 minutes. Or, steam simultaneously with rice if the rice cooker has a steam tray for a one-pot meal.
