A Pork Belly Dish marinated with Sweet & Sour Sauce and Garnished with the most colorful vegetables!
Ingredients

500g pork belly strips, cut into bite-sized pieces, skin removed
- 1/4 cup plain flour
- 1/8 cup cornstarch
- 2 tsp cooking oil

1 clove garlic, minced

1 white onion, diced
-
1 small-sized yellow bell pepper, diced

1 small-sized red bell pepper, diced
- 1 small can pineapple chunks

2-3 spring onions, cut to batons
- 1 Tbsp light soy sauce
- 1/2 tsp rice wine

1 garlic clove, finely grated
- ½ tsp ground black pepper
- ½ cup brown sugar
- 3 Tbsp white vinegar
- 2 Tbsp tomato ketchup
- 1 Tbsp light soy sauce
- 1/3 cup pineapple juice
- ¼ tsp Chinese five spice
- 2 tsp cornstarch mixed with 2 tbsp

Sweet & Sour Sauce
Directions
- Place the pork belly in a bowl and add your marinade. Mix until well combined. Leave in the refrigerator to marinate for 30 minutes.
- Make your sweet & sour sauce. Place all the ingredients in a saucepan and cook over medium-high heat. Let this simmer for 5 minutes until the sugar has dissolved. Add your cornstarch slurry mixture to the sauce and simmer for 2 more minutes to thicken. Remove from heat and set aside.
- Mix your flour and cornstarch in a bowl. Take out your pork from the refrigerator and dredge each piece in the flour mixture. Deep-fry the pork pieces for 3-4 minutes or until golden brown. Set aside.
- Heat up a wok over high heat and add the oil. Add in the chopped garlic and stir-fry until light brown. Add the onion and stir-fry for a minute. Then add the bell peppers and stir-fry for another minute. Add the pork, pineapple and the sweet & sour sauce. Stir-fry until well combined. Remove from heat and add the spring onions.
